Delicious!
I just had the most delicious chicken salad sandwich ever! And I made the chicken salad!
Back in June, my sister emailed me a recipe that she got from mom (is that how it happened?). I was going through my inbox and found it again. And since I'm at home now, I don't mind making my lunch occasionally.
So, I looked at the recipe and decided I wasn't going to use celery (yuck-ola!), pecans or dried cranberries. My sister had suggested using a granny smith apple so I used that, and I bought some grapes at the store on Tuesday. I didn't follow the recipe with all the amounts, but just took the general idea and ran with it. Let me tell you, that was a super yummy sandwich!
And you gotta love canned chicken. I wouldn't want it as my main dish, but in a chicken pot pie or chicken salad, it sure does make it super easy!
Here's the recipe:
4 c cubed chicken
3 ribs celery
1/2 c chopped pecans
1/2 c dried cranberries
1 1/2 c mayo
1/3 c honey
1/4 t salt
1/4 t pepper
Mix mayo, honey, salt, and pepper in bowl and set aside. Chop celery and combine with chicken, pecans, and dried cranberries. Combine in bowl with mayo mixture.

Don't tell the hubby this, but mayo and honey are the base for the poppy seed dressing we all love!!! Mmmmmm!
