Recipe Rut

I absolutely love staying home with X-man, but there is one thing that I do not enjoy...

Making the weekly menu. I want to make good meals but I don't want to spend hours cooking over the stove. I'd prefer things that go together quick and then bake or crockpot things or quick stove top stuff.

I get stuck with the same old same old...chicken and veggies, steak and veggies, beans and cornbread.

I've been getting a Kraft Foods magazine for several years and everytime one comes in the mail, I always get great ideas for meals (and then forget to go back and look at them when I'm stuck for ideas!).

This season's magazine has a great recipe for lasagna and I'm going to try it this week. And since there will be leftovers, that's two meals already planned!

And if you have any ideas for a great meal that won't have me locked up in the kitchen, please share!

Oh my gosh, that is so funny! I have been on their list for about two years and have quite a collection of their magazines. I use their recipes alot. Tonight, I made the fettucine/alfredo dish. I am going to make the lasagna one next weekend for my sister. Let me know how it turns out.

I love love love these mags! Yeah, they do use a lot of Kraft foods in their meals, but at our house, we usually have most of it on hand. I think each issue I've got is dog-eared and grease-spattered. One of my fave quick meals is from Fall '05 - One-pot Salsa Beef skillet. I love their one-pot meals, and this one gets pasta, protein and veggies all in one dish.

If you like pasta, how about shrimp linguini. Use fresh lemon juice, green onions, shrimp, garlic, olive oil and feta tossed with fresh pasta and it's fabulous. That's what we're having tonight anyway.

The cream cheese is not noticeable in my chicken enchilada recipe. It just makes the filling taste very rich. It's way yummy.

I hate hate hate coming home and spending anything longer than 15 minutes on dinner!

One of my favorite quick meals is chicken quesadillas. Get some 9 inches tortillas, shredded some chicken, throw in some cheese, onions, peppers and I like a little BBQ sauce... and BAM! Dinner! Add a touch of sour cream... HEAVEN!
